Basundi

Basundi is an Indian dessert found mostly in Maharashtra, Gujarat, Andhra Pradesh, Telangana, Tamil Nadu, and Karnataka. It is made by reducing the milk. People always get confused between basundi and rabdi. But let me tell you the difference. Basundi is slightly thinner, while rabdi is thicker in its consistency. Basundi is creamier while rabdi is filled with chunks of malai. The best part is it is delicious both hot and cold. It is often made during festivals or special occasions. Here is a simple basundi recipe to make at home.


Ingredients

  • Milk - 1 Litre
  • Sugar - 1 cup
  • Dry fruits powder (Almonds, Cashew, Walnut, Raisins, Makhane, Elaichi, Nutmeg) - 3 tbsp

Method

  1. Heat the milk in a heavy bottom vessel and stir it continuously to prevent the milk solids from sticking at the bottom. 
  2. Bring the milk to boil at medium flame and keep stirring. 
  3. Boil the milk till it reaches a thick consistency. 
  4. Add the dry fruits mixture and serve it with poories.
